Corvina, Corvinone e Rondinella are the backbone of the red wine production in the province of Verona (Amarone anyone?) and the chosen grape for Passo Dopo, the most important red wine of Roccolo di Monticelli winery. The vines are older than 40 years, the bunches are harvested by hands, destemmed, and gently pressed to obtain a pure must. The spontaneous fermentation occurs in steel tanks with one month of skin contact. The refinement take place in large used barrels on its fine lees for one year and the wine undergoes a further two years of bottle aging before selling. A wine that worth waiting, as the name says, Passo Dopo, I’ll pass by later.
