Cinciallegra is the italian name of Parus major, a very common passerine bird famous for its curiosity and its melodic chant. In a similar way, this pet-nat from the winery Il Roccolo di Monticelli, represent the cheerful and springy side of their production. The grapes come from a 50 years old vineyard, planted with two varieties, Garganega and Trebbiano di Soave, which are harvested in two different moments: a first harvest is done in advance in order to get more acidity, and the rest of the grapes are late harvested, to obtain more ripeness and a bigger concentration of sugar. Once the base wine is produced, it undergoes a second fermentation in the bottle only using the grapes' own yeast, without being filtered nor disgorged, and then it's ready to fly with the lightness of only 10.5% alcohol volume.
