After having bottled a 100% Chardonnay in 2020, Succus Weiss goes back to its blend of Chardonnay and Grüner. The wine is an assemblage of 2021 and 2022, in order to create complexity and experiment with different maturation levels. Both years the wine starts fermentation on the skins (less than a week), before being pressed and filled into used casks. Great freshness, but also a creamier element with a nice hint of reduction. Nice complexity, yet remaining playful, great stuff Mike!
