A blend of seven local red grapes. Each variety is harvested at a slightly early stage of ripeness and macerated briefly (3 or 4 days). After maceration, the wine is gently pressed and fermented in a stainless steel tank. After a few days (between 5 and 8), the second variety is harvested, the same process is followed, and it is fermented with the first, and so on until the seventh variety is harvested.
