Al Podere di Rosa is a biodynamic winery in the hills north of Lucca. The Chiesino Rosso is made from Ciliegiolo, Canaiolo, and a bit of Syrah. The maceration lasts for two weeks, after which the wine is partially aged in barriques, while a second portion remains in stainless steel. It is structured with a character of dark fruits, prominent tannins, and a certain development. Drink it at 15°C, ideally decanted, and pair it with a hearty legume stew.
