Toc is the name of a new line of experimental wines which vary according to the production of the vintage, inaugurated by Cascina Tavijn with Toc#1. In the local dialect, "toc" means "crazy" and it gives an idea of the kind of approach Nadia decided to take for this new adventure. In Toc#1, the protagonist is Slarina, a very rare and almost disappeared autochthonous vine, included only ten years ago in the national register of Italian vine varieties, that few brave producers have decided to propose to the public in a monovarietal version. The grapes come from a small farm specialized in the preservation of endangered grape varieties located in the province of Turin, and subsequently vinified in the cellar of Cascina Tavijn. Toc#1 shows a light garnet red color. The nose is fruity, clean and fragrant, while the acidity prevails on the palate, followed by a slightly tannic streak and an almond finish. A must try for those who fancy fruity, aromatic and easy-to-drink red wines.
