Ciliegiolo is the grape variety that prompted Antonio to start producing his own wine after a lifetime of working in other people's wineries. Twenty years ago, he produced his first pure Ciliegiolo, which was rare in the Maremma at the time. It was called Principio, which means beginning but also principle. Now the name is simply Ciliegiolo, but the principle remains the same: wine is made from the grape variety of the territory. Enjoy it chilled with simple tomato-based dishes such as panzanella or pizza marinara.
