The olives are harvested in boxes and pressed a few hours after picking.
The olive oil is obtained by cold extraction, maximum 27 degrees, using the Pieralisi method. The oil is filtered and obtained from the first two weeks harvest , with a prevalence of Moraiolo, then Canino and Frantoio.
