Al Podere di Rosa is a biodynamic winery located north of Lucca. The Chiesino Bianco is made from Vermentino and a touch of Trebbiano. A short maceration gives the wine more body and fruit extraction, and the fermentation continues partly in wood and partly in stainless steel. The wine is juicy and salty, with a generous stone fruit core and soft tannins, making it a great food companion. Drink it chilled at 12°C and pair it with blue fish or plant-based dishes with fennel flavors.
