The new punk label from the biodynamic winemaker Il Farneto is a PetNat made from Lambrusco Grasparossa and Malvasia Aromatica di Candia. The Malvasia is fermented on the skins for 10 days, resulting in a rosé with the tannins of an orange wine and aromatic flavors. The second fermentation is triggered by the addition of must from the same grapes in the spring before bottling. Chilled at 8°C, it is a perfect aperitif, but also a great pairing with focaccia and pickled vegetables.
