From the southern bank of the Danube, Christoph Hoch focuses on producing sparkling wine at his biodynamic winery. Kalkspitz is a PetNat made from Grüner Veltliner and Zweigelt. The grapes are spontaneously fermented in large used barrels, then blended and bottled. The second fermentation occurs in the bottle through the addition of fresh must from the current vintage. The fizz is pleasant, and the minerality and acidity give the wine a long, lively finish. A cuvée of 2021 and 2022 – enjoy it well chilled at 8°C and pair it with appetizers or light snacks.
