Biancammare is a white wine from one of the younger Grillo vineyards planted very close to the sea. Like the Rosammare, it is harvested earlier then the other vineyards in order to make a crisp wine defined by fresh acidity and lower alcohol. A short maceration allows for some phoenolics to build more structure, the wine then rests in concrete and it's bottle without any added sulfur. Packed full of citrus fruit and with the typical salinity of Nino's wines, Biancammare makes a great companion to seafood, especially when served raw or lightly marinated.
